Generalities applicable to all frozen food:

Freezing is a very widespread way to preserve food products and it is common to move them using refrigerated transports. The load is placed in a state of suspended animation, allowing for it to be used weeks or even months after production. The frozen state prevents bacterial growth, enzyme activity and slows down oxidation thereby extending the storage period.

Packaging and transport of frozen meat:
Most of the loads corresponding to red meat cuts, are prepared according to the preferences of the country or customer.

Chopped meat is wrapped in polythene materials to prevent moisture loss and then packed in boxes. The boxes must be sealed, secured with tape and carry an identification tag. The resistance of the boxes must be capable of withstanding the height of the stack without the boxes becoming deformed.

National regulations for import and export loads of red meat may vary by country, and usually specify a maximum temperature for storage. Usually this is -12 º C, but it may vary to -18 ° C due to the demands of large supermarket chains and / or more stringent requirements for quality control of different governments.
